We finish the year with a very sweet and cool recipe, particularly targeted to those of you who don’t torture themselves with impossible promises. So, if you have sworn that you’ll pass 2018 without touching sweets, you can close this page.
If you go on reading, be advised that you’ll surely run to your kitchen attracted by the temptation of getting ready these very sinful cupcakes.
Let’s go. Here you have the recipe for happy cupcakes (you know, the kind of cooler, more hipsterish muffins).
- 3 cups of wheat flour
- 2 tea spoons of backing powder
- 1/2 tea spoon of salt
- 3/4 cups of unsalted butter
- 1 1/2 cups of sugar
- 4 large eggs
- 2 tea spoons of vanilla extract
- 1 1/4 cups of milk
- a bottle of happy pills
- muffin molds
1.- Preheat oven to 180 ºC (350 ºF).
2.- In a medium bowl mix flour, baking powder and salt.
3.- In another medium bowl, whip the butter and sugar until light and fluffy. While you continue, add the eggs one after the other while mixing. Add the vanilla.
4.- Add the contents of the first bowl, alternating with milk and mixing to get rid of lumps.
5.- Add dough into the molds (grease them with butter first), up to three fourths. Bake until fluffy, aprox. 20 min. Take them out of the oven and cool in molds for 10 min, then remove them from molds and let them cool in the rack.
From this point, it is up to your creativity. You can decorate them with meringue or chocolate glazing, and use any kind of candy to top them up.
